Generally speaking, Australian Cabernet Sauvignon shares other Cabernets’ principal characteristics: readily identifiable & fairly standard aromas in the juicy, savoury spectrum with flavours to match. What was immediately apparent with this fine Australian example was that, while the aromas and flavours were consistent with the other Cabernets, the occasionally over-the-top depth of both flavours and aromas, as well as alcohol level and tannin, were not.
This Traditional Vintage Australia Cabernet Sauvignon was a particularly clear, ruby colour with no visible residues or cloudiness.
Distinctly separate aromas quickly presented themselves both before and after a bit of swirling in the glass. Those included cedar; chocolate; violet/late summer rose; eucalyptus; caramel; black cherry; with underlying smoke and a hint of raspberry.
Flavours mimicked aromas, the mouth feel was wonderfully smooth. This derived from excellent acidity levels and integrated tannins, in complete balance. Add to that a somewhat lower alcohol level than we have become used to seeing, the overall impression was one of elegance and refinement. This is a return to a less vivid style of Cabernet Sauvignon produced in the late 1970s and early 1980s in Australia, featuring alcohol levels of 12% or less.
This lovely Traditional Vintage Australia Cabernet Sauvignon would be delicious with roasted meats, particularly rare or medium-rare; complex tomato-based dishes such as ratatouille; and is perfectly drinkable on its own. Needless to say, it would find a home alongside a bit of medium-dark chocolate.
